Hello and welcome to Todd's kitchen. A while ago i made compound chocolate. Now i don't really know anyone who has not tried chocolate and I want to tell you that it is so delicious But ever since i made that video i have had so many people ask me to make white chocolate so join me today and look at me as i make my version and the proper way to make white chocolate I’m going to start off by explaining our first ingredient and our main ingredient which is raw cocoa butter which is also referred to as cacao powder now this won't be available in every shop, i was about to find this in my local health food store but if you can't find it there just google it and however I’m sure you will find a stockiest. So next time ok all of us are going to do together about what’s called a double boiler. So i have a pot of water on the stove ok!, Look it that it has a low water level simmering away and on top of that place a metal bowl. So the idea of having a low water it’s very simply that the water doesn't touch the bottom of the base because if it is touching the base what it will do is burn the chocolate. So into the bowl place in our cocoa butter and using a metal or rubber spoon or whisk and after that continue to stir it until it is completely melted. just make sure you don't use a wooden spoon otherwise it could contain moisture, if moisture gets into cocoa butter it'll just ruin it and you will have to start all over again The cocoa butter is now on the process to melt into that we will to sift in our icing sugar, also referred to as powdered sugar and just as our process of shifting it stir it ok! And it through at the same time once mixed through add in half a teaspoon of milk powder You can also use soy powder if you choose now people will be asking if they need to use milk powder and the simple answer is yes, yes you do because quite honestly to talk to you that's exactly how it’s made from the commercial stuff you buy from the shops and finally add half a teaspoon of vanilla ok! To do like that and then exactly mix it through now as one final step add a pinch of salt and what they will do is enhance that lovely chocolate flavor so now we are going to use a mold personally I'm using a mini cupcake holder but you can use any type of mold that you like uh. . . decorative molds non decorative mold seven cupcake rappers will do so I’m using this because I’m just making some round disks. It’s just a simple matter with some cooking spray oil just grease just the inside this won't affect the chocolates what so ever so all we have to do now is just gently pour some of our mixture into the cup holders. Once done we are going to leave it at room temperature and leave it for two hours simply ok! Do you know why? Because we don't want it to cool down to fast and after two hours place it in the fridge for another hour and after that it will completely set. i have taken them out of the fridge and they have popped right out of the molds very easily and they are done. Look at those. lovely lovely white chocolate chips. Now as i said you can use any mold that you like You don't have to make these round ones of course so pretty much the sky's the limit for how you want these to turn out but let’s see how they taste now that’s really good it tastes just like the white chocolate that you use to buy from the shops or supper market. It has a little bit of a hint of vanilla but it works perfectly with these white chocolate chips Of course you don't have to add the vanilla you can choose a different flavor strawberry for example you can make strawberry flavored white chocolate. But no matter what flavor you choose this white chocolate defiantly does taste simply delicious another thing i love about making it at home is you know exactly what goes in it So there’s no artificial colors flavors or preservatives.
